• 3 whole raw beets, peeled
  • 1 cup shredded fennel
  • ¼ cup dried fig pieces or raisins
  • ½ cup olive oil
  • 4 tbsp apple cider vinegar
  • 1 tbsp honey or agave nectar
  • ½ tsp caraway seeds
  • salt & pepper, to taste
  • 2 tsp Om BEAUTY mushroom powder


Using a grater, shred beets and fennel into a large bowl. In a separate bowl, whisk together the oil, vinegar, honey, salt, pepper, and Om mushroom powder. Pour dressing over beets and fennel and add the figs and caraway seeds. Toss to combine and garnish with a few extra seeds.
